2025 Wine Advent-ure: Day 13

Cavalys Cabernet Sauvignon (Mendoza Region, Chile)

For the 13th day of Advent it’s back to the Mendoza region of Chile to try Cavalys’ Cabernet Sauvignon. This wine has the aromas of dark red fruits like black cherry, as well as hints of cocoa, vanilla and spice. If I was going on aromas alone, this wine would be a winner. But taste is what counts and to be honest, I found this Cabernet Sauvignon rather “young” in flavor, and not the good way – grippy tannins, a fair bit of acidity and a sharp, alcohol undertone. On the plus side, it did have the flavors of black cherry and vanilla, but they were somewhat muted due to the aggressive tannins. Nonetheless, I couldn’t say I had a BAD experience drinking it. It was solid, just a little green. While it is drinkable now, I think this Cab Sauv would definitely benefit from a few years of cellaring, give it more time to mellow. Looking at the Total Wine online catalog, I see they have a Gran Riserva Cabernet Sauvignon from Cavalys as well. At $17.99 it’s worth a looksee, hopefully it will have a smoother taste.
