Brass Rabbit from Luxembourg is the featured wine of Day 21. Made from the underrated Pinot Blanc grape (far too often it dwells in the shadow of its more famous cousins, Pinot Gris and Pinot Noir), this wine is bright and lively, with intense aromas of citrus and stone fruit and high acidity. Juicy peach, lemon and apricot flavors paired with a high acidity makes this wine easy and fun to drink, with a citrusy finish that lingers long after the first sip. There is a little bit of spritz, so if a bit of fizz isn’t your thing, be warned. But for me, it adds to the wine’s vivacity. Brass Rabbit makes a great pairing wine for seafood, and chicken or pork dishes, but I think it would also be great solo or with a bit of fruit (a raspberriy or better yet a strawberry) added for the spritz.
